Sometimes you find out the darnedest things when you are bored.  To boil or not to boil, THAT is the question.

Seriously I have had this question with certain things I would cook.  Did you know that vegetables that grow underground (beets, carrots, potatoes, etc) should be started off in COLD water?  Meanwhile, vegetables that grow above ground (corn, peas, greens, etc) should be placed in already BOILING water?

Who knew?  Certainly not me.  Thanks Farmers Almanac - now maybe my corn will be tender and my potatoes not so mushy!
