I think we all have that one recipe that if you are going to a party and are asked to bring a covered dish, that's the one.

About 20 years ago a neighbor and friend made a broccoli and cheese casserole that ever since I've made my 'go to' specialty and it never fails to amaze.  Since we're in the holiday spirit I'll share it with you - it's so good that even someone that doesn't eat vegetables will be going for seconds!

As for measuring the ingredients, forget about it!  You can make as little or as much as you want, if you like it cheesier add more, if you like the broccoli firmer cook less - you get the idea.

Here's what you'll need:

  • Broccoli
  • Velveeta Cheese
  • Italian Bread Crumbs
  • Ritz Crackers

And here's what you'll do:

  1. Cook the broccoli to your tenderness (I prefer very soft).  Drain set aside.  After it drains well, put it all in a casserole or baking dish made for the oven.
  2. Take your Velveeta cheese cut into slices and place all over the broccoli, then take your Ritz crackers and mush them all over the top.
  3. Gently stir all the ingredients together.  Take your Italian bread crumbs and sprinkle all over the top - don't mix in.  Take a piece of aluminum foil and wrap tightly.  Put in a preheated 375 degree oven for about 40 minutes.  This will now be YOUR 'go to' dish.
